Five courses, five expressions, each rooted in a different legacy of excellence.
 
COURSE 1
Tequila: Fortaleza Blanco
Dish: **“Tahona Tradición” (**Pork Crackling, Banana Hot Sauce, Guacamole)
Why the name: Pays tribute to Guillermo Erickson Sauza, Fortaleza’s master distiller and great-great-grandson of tequila pioneer Don Cenobio Sauza. His revival of the traditional tahona wheel and brick ovens in Tequila town defines this blanco’s character.
Tasting Style: Herbaceous, briny, and citrus-driven perfect with crispy pork and sweet heat.
 
COURSE 2
Tequila: Casa Noble Reposado
Dish: **“Casa de la Nobleza” (**Hamachi, Spicy Citrus, Avocado, Jalapeño)
Why the name: “House of Nobility” reflects Casa Noble’s heritage and commitment to certified organic practices, slow cooking, and triple distillation. This reposado expresses refined smoothness and elegance.
Tasting Style: Honeyed vanilla, soft agave, and light oak balances fish and chili with grace.
 
COURSE 3
Tequila: Fortaleza Añejo
Dish: **“The Agave Alchemist” (**Tiger Prawn, Aguachile, Tortilla, Tomato, Escabeche)
Why the name: An homage to Guillermo Sauza’s artistry, blending old-world methods with a touch of rebellion. The reposado is aged just enough to bridge clarity with richness alchemy in liquid form.
Tasting Style: Roasted agave, baking spice, and earthy undertones elevate prawn and marinade.
 
COURSE 4
Tequila: Ocho Extra Añejo
Dish: **“La Loma 2018” (**Robata Grilled Picanha, Black Bean, Orange Salsa)
Why the name: Refers to the vintage and terroir-driven philosophy of Tequila Ocho, where every bottle is traceable to a specific field and year. “La Loma” is one of Ocho’s legendary ranches, and 2018 yielded bold, balanced agave.
Tasting Style: Deep caramel, citrus peel, minerality amplifies smoke and richness in beef.
 
COURSE 5
Tequila: Patrón El Alto
Dish: **“El Alto de Patrón” (**Ancho Chili Chocolate Mousse, Whipped Cream, Pepitas)
Why the name: “El Alto” not only refers to Los Altos de Jalisco where the agave grows, but also to the elevated craftsmanship blending extra-añejo and reposado in this luxurious pour. This is Patrón’s pinnacle.
Tasting Style: Notes of roasted nuts, dried fruit, toffee seamlessly echo chocolate and ancho spice
